Smoked Chicken Recipes

THAI SMOKED CHICKEN SALAD
Breasts
of chicken, one per person
- Sea Salt
- Freshly cracked pepper
DRESSING
-
3 tblsp chopped coriander
-
3 tblsp chopped mint
-
3 tblsp lime juice
-
3 tblsp brown sugar
-
1/3 cup soy sauce
-
1/3 cup vegetable sauce
-
1/3 cup sweet chilli sauce
-
Place all ingredients in a container and mix well.
SALAD
-
Cos lettuce
-
Red capsicum, sliced julienne
-
Cherry tomatoes to garnish
Directions
- Lightly
season chicken breasts with sea salt and pepper.
- Place two tablespoons
of sawdust on base of oven.
- Place chicken breasts on oven racks
and smoke for 20 minutes.
- Place lettuce leaves on plate; arrange remaining ingredients over
lettuce.
- Slice chicken breasts an place on top of salad.
- Drizzle
the dressing on top.

SMOKED CHICKEN AND MANGO SALAD
- Whole smoked chicken
-
12 Cherry tomatoes, halved then chargrilled (briefly).
-
3 Medium size onions
-
½ Cup basil leaves picked from stem
-
4 Whole garlic cloves
-
3 Fresh ripe mangoes skinned and sliced
-
3 Hands full of baby spinach leaves
-
Extra virgin olive oil
-
Cracked black pepper
-
Sea salt
-
Corralli pasta or penne pasta (cooked)
Directions
- Place 2-3 tablespoons sawdust on base of Togar smoke oven.
- Place whole chicken on bottom rack of oven, with extension kit in place, and smoke for one hour.
- Hand crush garlic and pan fry to develop flavour in oil.
- Slice and sauté onion.
- Break chicken up into pieces.

Add chicken and cherry tomatoes to onions and garlic, gently blend together for 3 mins.
- In a bowl put basil, baby spinach leaves and sliced mango.
- Combine the salad mixture and chicken combination on top of hot pasta.
- Serve with hot crusty bread and crisp white wine. Bon Appetite!

SMOKED CHICKEN FILLETS
Directions
- Sprinkle base of Togar smoke oven with 1 tablespoon sawdust and smoke for 20 minutes.
- Remove immediately. Use this basic recipe for Chow Mein.

CHOW MEIN
- 500g thinly sliced chicken (see above)
-
2 cups water
-
2 packets chicken noodle soup
-
3 medium sized onions, chopped
-
1 teaspoon ginger
-
1 teaspoon garlic
-
2 tablespoons olive oil
-
½ savoy cabbage, shredded
-
2 teaspoons tomato paste
-
1 tablespoon Worcestershire sauce
-
1 tablespoon soy sauce
-
2 teaspoons sweet curry powder
-
1 teaspoon mustard
-
1 cup sliced green beans
-
2 carrots, thinly sliced
-
2 sticks celery, thinly sliced
Directions
- Boil water and add chicken noodle soup. Cook 5 minutes and set aside.
- Fry onions, ginger and garlic in half the oil for 6 minutes. Remove.
- Pour remaining oil in pan and quickly brown the sliced chicken over high heat.
- Add cabbage, sauces, curry, mustard and soup. Cook for 10 minutes, stirring frequently.
- Add onions and cook for further 5 minutes.
- Season with salt and pepper. Serves 6.
